Natax 2.2 is an all-natural dough relaxer that improves machine-ability, dough handling, while also reducing shrink-back, mix times and energy requirements.

Natax 2.2 contains standardized levels of reducing power in much higher concentrations when compared to traditional inactive dry yeasts. It can be used as a label friendly, natural dough relaxer in bread, bun, tortilla, pizza, cracker and snack food applications. Additional benefits include the possible replacement of L-cysteine when using strong flours or doughs with high levels of gluten addition and naturally-occurring high levels of protein, fiber, vitamins and minerals.
The product color is light tan to brown in the form of a homogeneous powder. It comes in a 50lb poly-lined bag with a shelf life of 24 months when stored unopened in a cool, dry area. Natax 2.2 meets the requirements for organic use in baked products.
